We started Parkway Pizza with the goal of bringing high quality, delicious pizza to the streets of Colorado. Our passion for making pizza is based off our Jersey roots that started years ago.
Our menu is going to be simple, just as if you were in New Jersey. 16" and 12" pizzas, slices, and breadsticks that will want you coming back for more.
Planning a corporate event or private party? Let Parkway Pizza handle the catering! We'll also be around town at various breweries, sports bars and festivals that don't offer food as an option.
John and Ron have known each other since 8th grade in New Jersey, where they worked at the small town pizzeria throughout high school and college. After relocating to Colorado in 1997, they finally decided to bring the recipe here to the front range in the form of a pizza trailer.
John and Ron head to the new home base at Restaurant Depot to explore everything they need to make the dream come true... guess we're "making boxes" once again.
We are looking into 14' trailers that will be outfitted with two onboard propane driven pizza ovens to deliver your pizzas inside 10 minutes!
We'll have toppings to fit everyone's taste! We'll also have perfected our GLUTEN FREE option.

First video documenting the journey to starting a food trailer. John and I head to a local pizza joint and discuss the possibilities. Coming together after years of just "talking about it" and combining our knowledge, the first of conversation begins...
Trying out our recipes with the brand new pizza oven simply to see how our pies would come out at higher temperatures. This won't be the unit we use in the truck (That's another exciting episode coming soon...) but we learned how well it works and most importantly... how long does it take.
After making 22 dough balls from scratch, we take the oven to Ron's place of work and chef all pizzas made to order for workmates. Did it in less than 2 hours.
